Sauteed Cassava is a delicious Caribbean dish hat can be served beside a broad range of entrees. This video from Eat Ah Food shows how easy it is to make sauteed cassava at home.

Sauteed Cassava:

Ingredients:

  • 2lbs cassava
  • 2 cloves of garlic (minced)
  • 1 large onion (julienne)
  • 3 pimentos (julienne)
  • 1 sweet pepper (julienne)
  • 1 cup carrots (julienne)
  • 3 sprigs of fine thyme
  • salt & black pepper (to taste)

Method:

  1. Peel cassava, cut into 2 inch pieces
  2. Boil in salted water for 15 minutes or until tender but firm
  3. Saute onion, garlic, pimento, sweet pepper and carrots on medium heat for 1 minute
  4. Toss with cooked cassava
  5. Season with salt and black pepper to taste
  6. Add fresh thyme
