According to Baidawi of Eat Ah Food; “it have no right or wrong way” to fry plantain. It comes down to personal preference as some people prefer tostones or plantain chips. The ripeness of the fruit also plays a role since some types of fried plantain can only be made at certain levels of ripeness.

Many Trinbagonians make a blackened fried plantain from over-ripe plantains, and then enjoy it with sada roti for breakfast. Baidawi demonstrates his personal preferences in making this dish.
