How To Bake A Christmas Roast Pork

A Christmas Roast Pork is often the centerpiece of a Trini Christmas meal. This recipe from Foodie Nation demonstrates exactly how to make this classic Christmas dish.
INGREDIENTS:
5 lb pork leg (with bone)
1 teaspoon salt
1 tablespoon olive oil
1/4 teaspoon black pepper
2 tablespoon thyme (fresh)
1 sprig of Oregano
2 full stalks of chives
3 leaves chadon beni
3-4 cloves garlic
1 lime or lemon.
1/4 scotch bonnet pepper sliced very thin
METHOD:
Wash the pork with the juice of a lime and pat dry thoroughly with paper towels. Add in the salt, olive oil, black pepper, thyme, oregano, hot pepper, chadon beni, chives and garlic into a blender and blend. You want to achieve a thick paste. Take the meat, and carefully stab holes into the meat side, just a few. Take the marinade/paste, and paste it all over the meat side, not the skin. Work some of the paste into the small stab cuts. Marinate for 1 hour minimum. Use a fairly deep baking pan to marinate in. Heat the oven to 375, and then put in the meat for 2 hours Make sure the skin side is up, not touching the bottom of the baking tray. After 2 hours, flip the meat upside down and uncover, and bake again for another hour. After it comes out, let it cool for 20-30 mins before slicing. Enjoy!
